Bouillabaisse: Marseille traditional fish soup
Bouillabaisse, meaning boil and press from the French bout et abaisse, is a traditional fish soup originating from Marseille but famous all over the French Riviera. Originally, Bouillabaisse was a fisherman`s dish prepared with simple and cheap ingredients. Bouillabaisse featured local fish, usually those unsold at the daily market, such as the scorpion fish, with other seafood like mussels.
Bouillabaisse has many regional variations based on the different local fish. It also features onions, garlic, tomatoes, parsley and it is served with a tasty dressing prepared with olive oil, pepper and saffron.
